Papad curry

Papad was never meant to substitute spaghetti, till chef Saransh Goila made papad aglio e olio. Is that blasphemy>> Or is it not>> Whichever way the answer goes, the fact remains that it happened. Italians can fret all they want. But Goila quick-dipped long strips of papad in boiling water to turn it into the base for a dish that ideally should have only garlic, olive oil, maybe some chilli flakes and spaghetti - no papad for sure. But it did happen, and that highlights how papad is not just a fried/roasted digestive accompanying desi classics like dal khichdi.

We belong to a country that even makes curries out of papad (ask a Rajasthani to corroborate that fact). Here, Ganga Singh, chef at thali joint Rasotsav, makes it clear with his recipe for Rajasthani papad ki sabzi. There’s laal maas. There’s daal-baati churma. There’s also gatte ki sabzi from the same state. But this dish is different; it’s not Italian from any angle. It’s desi to the core; not a substitute for spaghetti. Check it out.


Ingredients

>> 4 medium-sized papad
>> 2 tbsp oil
>> 2 tbsp ghee
>> 1 tsp cumin
>> 1 tsp ginger-garlic paste
>> 1 tsp turmeric powder
>> 1tsp red chilli powder
>> 1 tsp coriander powder
>> 1 green chilli – chopped
>> 2 cups curd – whipped
>> 1 cup water
>> Salt to taste
>> Fresh coriander for garnish

Method
Heat oil and ghee on a medium flame in a pan. Add cumin seeds and allow it to crackle. Add chopped garlic and stir it till it gets light brown in color. Add turmeric powder, red chili powder, chopped green chillies and cook until oil separates from the masala. Add whipped curd to it and stir to mix well with the masala. Add two cups of water to the masala and allow the gravy to simmer until it is thick in consistency. Break fried papad and add to the gravy. Add salt as per taste and allow it to cook for 3-4 minutes on low flame. Garnish with fresh coriander and serve hot.
