Ingredients:
1. Grated carrots: 25gms
2. Spice mix - 15gms
3. Flour: 140gms
4. Baking Powder- 1/2 tsp
5. Baking Soda - 1/2 tsp
6. Butter - 120gms
7. Milk Maid: 200gms
8. Milk - 100ml
9. Vanilla essence - 1tsp
Method:
1. Mix all dry ingredients, grated carrot and spice mix. Keep aside.
2. Cream butter and milkmaid. Fold in the flour in butter and milkmaid. Add milk.
3. Bake at 160 degree Celsius for 25 minutes.
PUMPKIN COMPOTE:
Ingredients:
1. Grated pumpkin: 150gms
2. Sugar : 60 gms
3. Water – 80ml
Method:
1. Take grated pumpkin and sugar in a bowl and bring it to a boil.
2. Once it has cooled down, puree it.
PUMPKIN MOUSSE
Ingredients:
Whipping cream – 300gms
Gelatin – 10gms
Pumpkin compote – 60gms
Method:
1. Soak gelatin, keep aside. Let it bloom.
2. Take whipping cream, add pumpkin compote and mix well.
3. Melt gelatin, add 2 tsp of cream to gelatin and temper it.
4. Fold it into the mousse mixture.
Glaze:
Ingredients :
1. Store bought White glaze: 100ml
2. Saffron colour - a pinch
Method:
1. Add the saffron colour to the white glaze and pour it over the cake.
Assembling:
1. Take a half ring mould.
2. Cling wrap it.
3. Arrange carrot cake.
4. Soak it with sugar syrup.
5. Pour pumpkin mousse. Freeze it for one hour and decorate it with glaze.
