For World Macaron Day, chef Sanjana Patel creates five macarons with a volley of flavours thrown at her by bakers and food bloggers

If you love macarons, this is a great opportunity to sink your teeth into never-heard-of flavours to celebrate World Macaron Day (March 20) at La Folie today. Chef-owner Sanjana Patel has created innovations of the delicate and sweet meringue-based French confection, based on flavour suggestions from five food bloggers and home bakers.
These include Mango With Coconut Vanilla Bean Cream suggested by celebrity chef Karishma Sakhrani, Yuzu Cream and Hazelnut from self-taught baker and blogger Shivesh Bhatia, Cookies And Cream from blogger Nidaah Khan of Food Boss India, Butter Pumpkin Spice from doctor-cum-food blogger Alok Verma, and Miso Butterscotch Caramel from blogger Ankiet Gulabani. "The most challenging was the Miso Butterscotch Caramel flavour, as the quality of miso available is too salty and best for savoury dishes.
Burning it also generated a bitter flavour. After trying a couple of times, we did an overnight infusion of miso paste in cream and deglazed it with butterscotch caramel sauce to give it a sweet-savoury flavour. Also, we have used the miso paste as a surprise factor in the centre of the macaron shell as recommended by Ankiet," shares Patel, who sourced the suggestions a week ago.
The five macarons will compete against each other, and the flavour with the maximum sales will be crowned 'Best Blogger Macaron', getting on the shelves for an entire month. The outlets are also stocking a curated collection by Rushina Munshaw Ghildiyal featuring savoury flavours like Mirchi Kairi, Jeera Chaach, Kadipatta Tadka and a Masala Maggi variety.
