There's no better time to be a cheese fan in India. Local dairy farms are making available a variety of artisanal cheeses, which form the basis for a staggering array of innovative dishes guaranteed to put you into a cheesy food coma. However, if you're among the 75 per cent of Indians diagnosed with lactose intolerance (source: Sanjay Gandhi Post Graduate Institute of Medical Sciences, Lucknow), you're probably not as enthusiastic about subscribing to a dairy-fuelled food trend. The good news is that being lactose intolerant doesn't necessarily mean that all dairy is off limits, explains dietician and nutritionist Manisha Mehta.

"Cheese-making involves thickening the milk into curd, and draining the whey (liquid), which contains most of the lactose - a naturally occurring disaccharide sugar. Cheese varieties in which the whey has been drained from the curd contain lesser lactose than softer cheeses, which have more moisture. The same is true for cheese that has been aged - the longer a cheese is aged, the less lactose the final product contains.

Fat content is another important indicator - fatty cheeses typically contain lower amounts of lactose," she says.  Nutritionist Kejal Sheth agrees, "Most people with lactose intolerance can safely consume cheese with less than 2 per cent lactose. The range, however, does vary from one brand to another. If your intolerance levels are severe, it's best to check with the chef or restaurant manager about the lactose content of the cheese used."
