For the love of cheese

For Mansi Jasani, a 32-year-old turophile and founder of The Cheese Collective, the turning point came at the end of a three-day boot camp at a cheese store she would later intern at in New York. At the camp, participants spent their time making, tasting and learning all about cheese, and it involved 75 varieties. "At the end of it, everyone was sick of cheese, but I could still eat more," says Jasani. "That was sort of the turning point in my life when I realised that I need to be in this industry," she adds.

This Saturday, Jasani's venture joins hands with The Open Library Project, a non-fiction library service that often gets experts from different industries on board as curators, to host a cheese-tasting workshop that will entail a thorough 101 on all the elements of the all-time-favourite ingredient. The workshop will involve a talk on cheese and how to buy, store and cook with it; a tutorial on different varieties of cheese and how to identify them; cheese tasting; and a chat on the difference between artisanal and processed cheese.

There will also be tutorials on pairing different cheeses with seasonal fruits and veggies as well as beverages. On offer will be four types of cheeses for tasting that will follow a pairing session where Jasani will demonstrate one or two pairings. Speaking of what one can look forward to, Jasani says, "I have been conducting workshops in different capacities for a couple of years now. The interesting thing about this format is that I will be able to share my knowledge in a more intimate setting."
