Former French Prime Minister and President Charles de Gaulle, while speaking of politics and diversity, once said, "How can you govern a country which has 246 varieties of cheese?" True as that might be, ask a cheese lover and they'll probably tell you that the only confusing thing about 246 varieties of cheese is where to start.
And speaking of where to start, we have a suggestion - a pop-up hosted by Fromagerie, which specialises in gourmet grilled cheese sandwiches. "We are trying to reach out to people on a smaller scale via social media and pop-ups before we set it up in brick and mortar," says founder and chef Nuzha Ebrahim.
On offer are intriguing options such as their signature four-cheese chilly cheese toast, the black olive tappenade with brie and the one that piqued our interest most - the spiced apples, sauteed kale, candied walnuts and applewood smoked cheddar sandwich. "You'd think it's sweet, but it's not. The sweetness from the apples is offset by the smoked cheese and the spicy and peppery flavour of the kale, while the candied walnuts add crunch and texture to the dish," Ebrahim explains.

For non-vegetarians, there's the pulled chicken in tomatillo salsa verde with monterey jack cheese, a green salsa-based tangy sandwich with Mexican flavours. The slow-cooked tenderloin ragu with caramelised onion and emmental is a tomato-based sandwich packed with tenderloin cooked for over 10 hours and emmental, which is an aged cheese.
"We like to challenge people to get out of their comfort zone and try flavours they wouldn't ordinarily think of. We honestly believe we're doing God's work in spreading the gospel of cheese!" Ebrahim jokes, speaking of what one can look forward to.
